It will help if you explain zhuan in the sentence: "..jiang shang san jie zhuan ye ke"

专 - zhuān - on its own, means expert
专业 - zhuān yè - this phrase means professional
课 - kè - class
therefore, we can separate this phrase - 专业课 into two parts, which are 专业 and 课,so altogether, 专业课 means core subject

And...the correct way to address a teacher in Chinese should be - Wu lao3 shi1, as we always put Surname first:)
